Mexico San Isidro Micro Lot Organic

This coffee comes from the Red 5 de Diciembre group in Oaxaca Mexico.  A micro lot is a small, carefully selected batch of coffee that is often distinguished by its unique quality.  Micro lots come from a specific part of the farm and are typically harvested a little later in the season.  The meticulous cultivation and extra attention paid to handpicking only the best cherries make micro lots shine in the cup.

San Isidro Zoquiapam is a coffee traceable to 90 families in Oaxaca Mexico.  This coffee is a mix of varietals Typica, Bourbon, Cattura and Mundo Novo grown at elevations over 6,500′!  These farmers use concrete poured home stations for floating and pulping the cherries, parchment flotation and 12-24 hours of fermentation.  After this is completed, the coffee seeds are rinsed and transferred to raised beds for 1-2 days of drying.  The coffees are then transferred again to patios for an additional 6-9 days of drying.
