This coffee comes from the Red 5 de Diciembre group in Oaxaca Mexico. A micro lot is a small, carefully selected batch of coffee that is often distinguished by its unique quality. Micro lots come from a specific part of the farm and are typically harvested a little later in the season. The meticulous cultivation and extra attention paid to handpicking only the best cherries make micro lots shine in the cup.
San Isidro Zoquiapam is a coffee traceable to 90 families in Oaxaca Mexico. Â This coffee is a mix of varietals Typica, Bourbon, Cattura and Mundo Novo grown at elevations over 6,500′! Â These farmers use concrete poured home stations for floating and pulping the cherries, parchment flotation and 12-24 hours of fermentation. Â After this is completed, the coffee seeds are rinsed and transferred to raised beds for 1-2 days of drying. Â The coffees are then transferred again to patios for an additional 6-9 days of drying.
