The white honey process makes it sweeter and silkier than a typical washed Ethiopian while keeping the clarity and florals the region is known for.\u003c\/p\u003e\n\u003ch3\u003eThe farmer\u003c\/h3\u003e\n\u003cp\u003eReshad Ababulgu is a second-generation farmer in the Agaro area of Jimma, in western Ethiopia. His family has worked the same land for about 60 years, passed from his grandfather to his father to him. In the early 2010s he replanted with improved varieties and modern growing practices. He lives less than a kilometer from the farm with his wife and three children, and coffee is the family's only livelihood.\u003c\/p\u003e\n\u003cp\u003eFor years Reshad sold his cherry to local cooperatives, so his coffee was blended in with everyone else's. He now has his own export license, which means he can sell his coffee under his own name and earn the premium his quality deserves. This is his coffee, fully traceable to him.\u003c\/p\u003e\n\u003ch3\u003eThe process\u003c\/h3\u003e\n\u003cp\u003eWhite honey is a careful method. The cherry skin is removed, a thin layer of the sticky fruit (mucilage) is left on the seed, and the beans dry slowly on raised beds.
