Producer Jose Lizardo Alba runs Finca Los Jazmines in Palestina, Huila, Colombia. His farm sits high in the mountains at over 4,900′ where the best coffees are grown. Los Jazmines is varietal Pink Bourbon and anaerobically fermented for 76 hours. Afterwards, the coffee is dried in greenhouses for 18-20 days.
At Finca Los Jazmines Lizardo grows varietals of Pink Bourbon, Colombia and Castillo and Geisha. This lot is made up of 100% Pink Bourbon. He begins by picking only the ripest cherries, and when the coffee arrives at the wet-mill, the few immature beans that were picked are manually selected out. Afterwards, the coffee is floated in water to remove any overripe and underripe beans that can be hidden behind a “mature” looking cherry.
