Nicaragua Finca Idealista Pacas Rainforest

This coffee is grown high in the mountains of Matagalpa Nicaragua at nearly 4,000′.  The variety is Pacas which is a natural mutation of Bourbon.  The coffee is processed washed and has beautiful flavour notes of clementine, honey, blueberry and slight jasmine.

Finca Idealista is Gold Mountain Coffee Growers flagship farm.  This farm is an example of how one farm can have a significant impact on people and the environment.  Finca Idealista makes it a priority not to just fairly compensate the hard working coffee pickers, they pay them double the rate!  Rather than using herbicides to kill off vegetation they use machetes!  Rather than using pesticides to kill off bugs they use mushrooms!  Volcanic filters are used to keep mucilage-filled wash water out of the watershed.  The farms chickens roost above the compost to infuse it with nitrogen.  On top of the incredible stewardship of its workers and environment, Finca Idealista purchased the farms surrounding rainforest just to protect it.
