Jose Francisco and Emma’s farm, El Mirador, sits at 4,600′ in the region Jinotega, Nicaragua. Their “cherry microlot” beans have a slower maturity rate because of the high altitude and cool climate, allowing the beans to absorb more nutrients. The result is more complex notes and denser, sweeter beans. They grow varietals Red Caturra and Red Catuai to make up this coffee. This is a washed coffee and is delicious served as filter coffee or espresso.
